Savoury Croissant Bites


Now who wouldn't fancy one or more of those?


I came up with these flavoursome morsels whilst volunteering at our local, food waste pantry.


Looking at a large quantity of day old croissants, got my chefs brain thinking they could become something savoury, tempting and delicious for a warm canape, for our

"Vive La France" Supper Club evening.


They are sort of based on a bread and butter pudding, can be made the day before, reheat brilliantly and are a tasty hit of croissant, bacon, and cheese, whats not to love?


This recipe makes approximately 60 small bites


Ingredients


400g, smoked small chopped lardons

Splash of olive oil

8 eggs

600ml double cream

4 fresh sage leaves, finely chopped (thyme would be also good)

Salt and pepper

200g finely grated emmental cheese

400g stale croissants cut into roughly, 1.5 cm small cubes (I used 4 large)


Method


Line a fairly deep, (5cm) 24 x 28 cm oven pan with parchment paper.


Heat the oil in a non stick frying pan, add the chopped lardons, and cook on a medium - high heat until brown and crispy,drain onto paper towel. (Keep an eye on these as they can burn easily if too hot)


Break your eggs into a bowl, and beat the cream into the eggs with a whisk.

Season this "custard" well with salt and pepper, add your sage.


Now add the croissants, bacon, and lastly the cheese.


This can now sit and soak whilst you preheat your oven 180ºC, 160ºC Fan, Gas 4.


Spread the croissant custard mix, into the prepared pan and bake for 50 minutes, or until the surface has slightly puffed up and browned. Let rest for at least 10 minutes. Remove from parchment, and cut into cubes about 3 x 3 cm.


If making the day before, cover and chill the pan when cool.When ready to reheat, cut into cubes, as above, and place on a parchment lined baking tray, and place in a preheated oven, 200ºC, 180ºC fan, Gas 6, for 5-10 minutes, until heated through,serve.
